Make the Best Orange Marmalade


Marmalade is a fruit preserve, made of orange or other citrus fruit. Marmalade can be made from lemons, limes, grapefruits, oranges or any combination thereof. It is not difficult to make, just a little time consuming.


Instructions


1. Ingredients:


4 cups prepared fruit (4 oranges & 2 lemons)


2 1/2 cups water


1/8 teaspoon baking soda


5 1/2 cups sugar


1 box fruit pectin (Sure-Jell is one kind)


1/2 teaspoon margarine or butter


2. Jars and Lids:


Boil jars in water in a large pot for 10 minutes.


Boil flat lids in saucepan 1 minute and turn off burner. Leave them in the hot water until needed.


3. Fruit Preparation:


Remove only the colored part of the peel from 4 oranges and 2 lemons using a vegetable peeler and cut peel into thin strips. Remove and discard the white part of the peel on oranges and lemons as this is bitter and tough. Chop the fruit, keeping the juice,and set aside in bowl.


4. Cooking the Marmalade:


-Combine the peels, water,and baking soda in a saucepan.


-Bring to a boil - reduce heat - simmer covered 20 minutes.


-Add fruit & juice and simmer covered 10 minutes longer.


-Mix pectin into fruit in saucepan and add butter.


-Turn up heat and bring to a full rolling boil, stirring constantly.


-Stir in all the sugar and bring to a another full rolling boil. Boil for 1 minute stirring constantly. Remove from heat and skim off foam with a metal spoon.


5. Canning:


Ladle quickly into prepared jars - fill to within 1/8 inch of top.


Wipe rims and jar lids. Cover with 2 piece lids and screw on tightly.


Invert jars for 5 minutes to seal.
