Molded gelatin is a great alternative to standard sheet gelatin.
Molded gelatin desserts are a traditional family sweet that have been used for many generations. Although the use has dwindled recently, it is a still just as enjoyable to make with children and can even be used a centerpiece. Powdered gelatin is heated, than refrigerated to gain its elasticity, and the molds can be prepared up to a few days ahead of use. The combination of fruit with gelatin creates a unique flavor combination that is simple to make with practice.
Instructions
1. Combine the fruit gelatin with the flavored gelatin in a large bowl, and add five cups of boiling water.
2. Place bowl in the refrigerator until it has partially cooled. Spray mold with cooking spray.
3. Fold in fruit into the gelatin gently, then pour into prepared mold. Refrigerate until firm.
4. Pour very hot water into a large bowl. Insert a knife around the edge of the mold about an inch deep. Dip the mold into the water for about two seconds, making sure water doesn't get into the mold.
5. Place the serving plate over the mold. While holding onto the platter and the mold, flip them over so that the serving plate ends up on the bottom. If the gelatin does not come out, tap the top of the mold a few times. Remove mold and refrigerate immediately.
6. Garnish gelatin with fruit or whipped cream just prior to serving.
