Instructions

Cook Boil

1. Purge the Crawfish. Rinse crawfish in water until the water runs reasonably clear. Next, add water to cover the crawfish and add 2 cups of salt. This process will rid the crawfish of impurities. Then stir for 3 minutes and rinse. To finish purging, keep the crawfish alive in the pot with very little water and keep in a cool or shaded area until they are ready to be cooked.

2. Fill a large pot halfway with water.

3. Put over heat. If you can cook outdoors, all the better.

4. Add crawfish or crab boil seasoning. Cover and bring to a boil. Boil 2 to 3 minutes or until spices are blended well.

5. Add onions, sausage, mushrooms and potatoes into a large wire basket. Boil and cook 10 minutes or until potatoes are soft. Add crawfish to the wire basket and keep stirring. Then cook for 4 to 5 minutes, but don't over-cook the crawfish.

6. Eat like a true Cajun, and serve on a newspaper-covered table, preferably outdoors. Dump the wire basket contents in the center of the table.

Eat Like a True Cajun

7. Grasp the crawfish head with one hand.

8. Take the tail with the other hand.

9. Squeeze and twist the tail and the meaty end will twist out of the head.

10. Peel away any extra shell that is attached to the tail.

11. Squeeze and the meat will pop right into your mouth.
