High maltose corn syrup is "Generally Considered as Safe" by the United States Food & Drug Administration. However, corn starches and syrups often appear in foods that are high in fat and calories, and should be eaten in moderation.
Digestion
High maltose corn syrup breaks down to glucose molecules once inside the body, considered a much healthier form of digestion, or at least more healthy than related corn syrup sweeteners.
Gluten
High maltose corn syrup and other corn starch sweeteners contain gluten, and should be avoided by those with celiac disease.
