Make Apple Cookies

Make Apple Cookies


These apple cookies are extra hearty, especially with the addition of raisins, nuts and a special topping. Yields 4 dozen cookies.


Instructions


1. Preheat oven to 375 degrees F.


2. Grease cookie sheets with nonstick cooking spray.


3. Beat 1 1/3 c. of the brown sugar and 1/2 c. of the butter in a large bowl until light and fluffy.


4. Add egg and blend well.


5. Add apple and apple juice and blend well.


6. Add flour, baking soda, 1 tsp. of the cinnamon, and salt to mixture. Mix well.


7. Stir in raisins and nuts. Set cookie dough aside.


8. Using a shallow bowl, combine and stir together oats, remaining 3/4 c. of brown sugar and remaining 1/2 tsp. of cinnamon.


9. Melt remaining 1/3 c. butter and stir into mixture. Mixture should be lightly moistened.


10. Drop cookie dough by the heaping teaspoonful onto the greased cookie sheets, at least 2 inches apart (cookies will spread). Top each cookie with 1/2 tsp. of the oat/brown sugar topping.


11. Bake cookies 8 to 12 minutes, or until the edges are golden brown.


12. Cool 1 minute and then place cookies on a wire rack to finish cooling.
